Cheese and vegetable puff pastry roll

The cheese and vegetable puff pastry roll is golden, with cherry tomatoes and spring onions still on show. This Easter roll has a soft filling and crisp, golden pastry. I prefer Delaco fluffy cream cheese and make sure it’s easy to spread. Prep: 20 minutes. Cook: 25 minutes. Total time: 45 minutes. Serves: 4. About 350 kcal and 10 g protein per serving.
Ingredients
- 1 sheet puff pastry
- 70 g farmer cheese
- 2 tablespoons cream cheese with sour cream
- 1 pinch of salt
- 10 g spring onion leaves
- 6 cherry tomatoes
- 1 egg
- 1 yellow bell pepper
Preparation
1. Grate the farmer cheese and mix it with the cream cheese. Finely chop the spring onions, save a few leaves for garnish and put the rest in a bowl with a pinch of salt. 2. Beat the egg and mix it into the cheese mixture, saving 1 teaspoon for brushing. 3. Roll out the puff pastry and spread the cheese mixture over it. Arrange the thinly sliced pepper, sliced tomatoes and reserved onion leaves on top, then roll it up. 4. Brush the roll with the reserved egg and place it on a baking tray lined with baking paper. Bake in an oven preheated to 180°C for 25 minutes, until golden.
Notes
The roll keeps in the fridge in a sealed container for up to 3 days; once cooled, the pastry loses some of its crispness. You can mix the filling a few hours ahead and keep it chilled, then fill the pastry just before baking. Choose a drier farmer cheese that grates easily; if it seems wet, leave it to drain before mixing. If the cherry tomatoes are very juicy, remove the seedy part after slicing them so they don’t make the pastry soggy. Red pepper can replace yellow in the same quantity, one pepper, and tastes sweeter. With more layers of pastry, the outside comes out crispier and thicker, so bake the roll until well browned. Puff pastry contains gluten, and the cheese and cream cheese contain dairy; egg is in both the filling and the glaze. Serve slices with a simple green salad.
Frequently asked questions
How do I stop the roll from coming apart while baking?
Leave 2 cm of the pastry edge free of filling and put the seam underneath on the tray.
Can I replace the farmer cheese with telemea?
Yes, use 70 g of well-drained telemea, a Romanian brined cheese, and leave out the salt, since telemea is already salty.
What cream cheese can I use?
Choose plain cream cheese with no added flavors, the same amount of 2 tablespoons; it should be easy to spread.
