Loboda Soup

To prepare a delicious lamb's quarters soup, we start by washing the lamb's quarters well under a stream of cold water, ensuring that we remove any impurities or dirt. After cleaning it, we cut the lamb's quarters into thin strips, in a faithful style, so that it cooks evenly and integrates perfectly into the soup. Next, we take care of the onion: we peel it, wash it well, and slice it into thin rings. In a spacious pan, we put a little oil and add the sliced onion, letting it sauté over medium heat. It is important to stir constantly, so that the onion becomes soft and golden, releasing its flavors. Once the onion has softened, we add the sliced lamb's quarters and let them sauté together with the onion for a few minutes, until the volume of the lamb's quarters decreases and becomes softer. Now we can add water, being careful to bring the soup to a gentle boil, letting it simmer over moderate heat. After the lamb's quarters have boiled for about 10-15 minutes, we add the washed rice in several waters, ensuring that it is well cleaned of starch. We continue to let the soup cook, stirring occasionally, until the rice is cooked and has absorbed some of the vegetable flavors. At this point, we can prepare the borscht separately, boiling it in another pot, and then add it to the vegetable and rice mixture. It is important to mention that if we prefer a milder soup, we can skip the borscht, and the taste will still be just as flavorful. To intensify the aroma, we also add a tablespoon of tomato paste, letting the soup come to a few more boils. Finally, we chop fresh tarragon, washed well, into small pieces, which we add on top of the soup immediately after turning off the heat. This will bring an extra freshness and will perfectly complement the flavors. If we want a richer version, especially when we are not fasting, we can enrich the soup with a beaten egg, which will add a special creaminess. The lamb's quarters soup is served either hot, being comforting on cool days, or cold, being a wonderful choice for warm summer days. This recipe is not only easy to prepare, but it is also an excellent source of vitamins and nutrients, bringing a touch of health to every plate. Enjoy it with fresh homemade bread or with hot peppers, for a perfect culinary experience!
