In a separate bowl, combine flour type 400 with flour type 550 and mix with the dry yeast. 3. Gradually incorporate the flour mixture into the liquids, kneading by hand or with a mixer with a hook, until you obtain a non-sticky but still soft dough. If necessary, add another tablespoon of flour if it is too sticky. 4. Let the dough rise, covered with a towel, in a warm place away from drafts. Leave it for 30 minutes, until it doubles in volume. 5.
