Boil the pasta al dente according to the instructions on the package. Once cooked, drain well and set aside. Generously grease a baking dish with butter, ensuring it is evenly coated to prevent sticking. Preheat the oven to 180 degrees Celsius, so it is ready to receive the delight you will prepare. Divide the amount of cheese into two: grate half and cut the other half into cubes. If you prefer a stronger flavor, you can crumble the telemea cheese. This will add a salty and creamy note to the dish. In a pot, bring the milk to a boil along with thyme, finely chopped onion, and coarsely chopped garlic. Let it simmer on low heat, being careful not to burn it. After boiling, set aside, cover the pot, and let it infuse until it cools down. Then, strain the mixture to obtain flavored milk. In a pan, melt a little butter and add the flour, stirring continuously to avoid lumps. Transfer the pan to a bain-marie and gradually add the strained milk, whisking vigorously. Let it cook on low heat until the mixture begins to thicken. When it reaches the desired consistency, immediately incorporate the grated cheese and crumbled telemea, parmesan, nutmeg, and pepper. Mix well to obtain a creamy and homogeneous sauce, and finally, season with salt to taste. Add the drained pasta to the delicious sauce, along with the cheese cubes. Gently stir to combine the ingredients, then pour everything into the previously prepared baking dish. Evenly sprinkle the grated parmesan on top, which will create a golden and appetizing crust during baking. Place the dish in the preheated oven and let it bake for about 20-25 minutes or until the cheese is completely melted and a nicely browned crust forms on top. Once ready, remove the dish from the oven and let it cool slightly before serving. Serve generously while warm, and enjoy the rich flavors and creamy texture of this comforting dish.
