Sweet bread with bananas

To begin with, we preheat the oven to 180 degrees Celsius. It’s time to prepare the pan in which we will bake our wonderful sweet bread. Whether we choose to use parchment paper or opt to grease the pan with butter and flour, ensuring it is well-prepared is essential to prevent the cake from sticking. Next, we will need two large bowls. In the first bowl, we will mix the dry ingredients. We start by sifting the flour to aerate it and make it uniform. Then we add the sugar, baking powder, a packet of vanilla sugar, chopped nuts, and a pinch of salt. This mixture will form the flavorful base of our sweet bread. In the second bowl, we focus on the liquid ingredients. We peel two large bananas and mash them well with a fork or a blender, obtaining a smooth puree. To this puree, we add the melted butter, slightly cooled, and the two eggs. It’s important to mix the ingredients well so that everything integrates perfectly. Now comes the moment to combine the two mixtures. We pour the liquid mixture into the bowl with the dry ingredients and gently mix with a spatula, avoiding overmixing to prevent a dense texture. Once the mixture is homogeneous, we transfer it to the prepared baking pan, ensuring it is evenly distributed. For a more attractive appearance, we decorate the top with thin slices of banana and, if desired, add a few extra nuts. This step not only enhances the visual appeal but also adds texture and flavor. We place the pan in the preheated oven and bake the cake for about 50-60 minutes. It’s important to monitor the baking process, as each oven is different. When we notice that the cake has taken on a golden and nicely browned color, we can perform the toothpick test. We insert a toothpick in the center of the cake; if it comes out clean, it means it is ready. After removing the cake from the oven, we let it cool in the pan for a few minutes, then transfer it to a rack to cool completely. Once cooled, we can cut it into generous slices and enjoy the delicious aroma that has filled the entire house. This sweet bread is perfect to be savored alongside a cup of tea or coffee, making it an excellent choice for breakfast or a snack.
