Mushroom filo rolls

Appetizers - Mushroom filo rolls by Loredana G. - Recipia

For mushroom filo rolls, the filling cools before it goes onto the thin sheets. Brined mushrooms, green onions and parsley are rolled up in filo pastry, then baked until golden. The smell from the Fornetti stand tempted me, but my stomach wouldn’t have been happy, so I waited until I got home to make them; I eat them once they’ve cooled. Prep: 20 minutes. Cook: 24 minutes. Rest: 10 minutes. Total time: 54 minutes. Servings: 4. About 430 kcal and 10 g protein per serving.

Ingredients

  • 400 g filo pastry sheets
  • 400 g brined mushrooms (canned)
  • 100 g green onions
  • 15 g fresh parsley
  • 50 ml olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1/8 teaspoon ground nutmeg
  • 3 g starch
  • 30 ml cold water
  • 15 ml water
  • 1/4 teaspoon turmeric
  • 10 g sesame seeds
  • 15 ml milk (optional)

Preparation

1. Heat the oven to 180°C. Drain the brined mushrooms and rinse them with cold water. Finely chop the green onions and parsley. 2. In a pan, sauté the green onions, parsley and mushrooms in the olive oil for 3 minutes, until the onions soften. Add the salt, pepper and nutmeg. 3. Mix the starch with 30 ml of cold water. Pour it into the pan and cook the filling for 1 more minute, stirring, until the liquid thickens. 4. Leave the filling to cool for 10 minutes. Thaw the filo sheets at room temperature, then lay them out. 5. Put some filling on each sheet and roll it up. Brush the rolls with either 15 ml of water mixed with turmeric or 15 ml of milk. Sprinkle with sesame seeds and cut the rolls into 3-4 cm pieces. 6. Arrange the pieces on a baking tray lined with baking paper and bake for 20 minutes at 180°C, until golden.

Notes

Whole canned mushrooms can be chopped smaller if they’re large, so they’re easy to divide among the rolls. Filo sheets dry out quickly in the air, so keep the stack covered while you work. If the mushrooms are still too salty after rinsing, rinse them once more and let them drain well. Keep the pastries in a container in the fridge for up to 3 days; to reheat, bake them for 5 minutes at 170°C. I serve them with a green salad. The sheets contain gluten, sesame is an allergen, and milk is used only for one of the brushing options.

Frequently asked questions

Can I replace the canned mushrooms with fresh mushrooms?

Yes. Use 250 g of chopped fresh mushrooms and cook them for 7-8 minutes, until the liquid evaporates.

What should I do if the filling still seems too watery?

Cook it for 2 more minutes over low heat, stirring, until there’s no free liquid left at the bottom of the pan.

How do I stop the rolls from coming apart in the oven?

Overlap the edge of the pastry sheet by about 2 cm and place the roll on the tray with the seam underneath.
