Halibut with Tellinas and Tomato Sauce

Make sure you have on hand a large onion, a few cloves of garlic, two to three ripe tomatoes, a lemon, fresh clams, a fish of your choice (e.g., sea bream or trout), olive oil, salt, pepper, and your favorite spices, such as basil or oregano. The first step is to finely chop the onion. This will add a sweet and rich flavor to our dish. In a non-stick pan, heat a little olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, stirring occasionally to prevent burning. If you are a fan of strong flavors, you can add finely chopped garlic cloves or leave them whole for a more subtle taste. Once the onion is well sautéed, it’s time to add the grated tomato. This will make the sauce rich and full of flavor. Season with pepper, basil, or oregano, but do not add salt now, as the clams already have a salty content from the sea water. Brush the fish with oil on both sides and fry it in a non-stick pan over medium heat for about 4-5 minutes on each side until it becomes golden and crispy. When the fish is ready, it’s time to serve it. On a plate, carefully place the fried fish. On top, add a few drops of lemon juice to enhance the flavors. Next to it, place the clams with tomato sauce, sprinkle a dash of freshly chopped parsley, and garnish with lemon slices.
