Yellow bean salad with yogurt

Salad - Yellow bean salad with yogurt by Livia F. - Recipia

Yellow bean salad with yogurt brings together cooked pods, salty feta and strips of Sibiu salami. Served cold, it has a thick yogurt and cheese mixture, with raw red pepper that stays crunchy among the beans and goes well with bread. I break the pods into roughly equal pieces because that’s how I like to find them in the bowl. Preparation: 20 minutes. Cooking: 15 minutes. Resting: 30 minutes. Total time: 65 minutes. Serves: 4. Approximately 320 kcal and 17 g protein per serving.

Ingredients

  • 100 g broad yellow beans
  • 1000 ml water
  • 3/4 teaspoon fine salt
  • 15 g fresh parsley
  • 200 g feta cheese
  • 100 g Greek yogurt
  • 100 g Sibiu salami
  • 1 medium red pepper (150 g)
  • 2 garlic cloves
  • 1 small green pepper (80 g)
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice (optional)
  • 1/4 teaspoon ground pepper (optional)

Preparation

1. Trim the pods, wash them and break them into small pieces. Separate the parsley stems from the leaves and keep both. 2. Bring 1000 ml water to a boil with 1/2 teaspoon salt and the parsley stems. Add the pods and boil for 12-15 minutes, until tender but still holding their shape. Drain them and discard the stems and water. 3. Dice the red pepper, cut the Sibiu salami into strips, and chop the garlic and parsley leaves. Crumble the feta and mix it in a large bowl with the yogurt, pods, salami, red pepper, garlic and parsley. Taste and mix in up to 1/4 teaspoon salt. 4. Smooth the top of the salad, drizzle with the olive oil and sprinkle with finely chopped green pepper and parsley. If you want it tangier or spicier, add lemon juice and pepper. Cover the bowl and chill the salad for 30 minutes.

Notes

The broad pods should be firm, with no soft spots. Thin ones reach the right texture sooner than mature ones. Feta can be very salty, so taste the mixture before adding the remaining salt. The salad goes well with toasted bread, which is good for scooping up the thick yogurt from the plate. You can make it a few hours ahead and keep it covered in the fridge; eat it within 3 days. You can use 100 g cooked ham, cut into strips, instead of Sibiu salami. The salad contains dairy, from the feta and yogurt. The green pepper for garnish can be chopped very finely so it doesn’t cover the pieces of pods.

Frequently asked questions

Can I use frozen pods?

Yes. Add 100 g straight to the boiling water and cook for 8-10 minutes, then check that they’re tender but still whole.

What should I do if the salad is too salty?

Mix in another 50 g Greek yogurt and taste again. Don’t add any more salt.

Why is there liquid in the bowl?

Leave the drained pods for another 5 minutes before mixing them in, and put the yogurt in a fine-mesh sieve for 10 minutes to drain off the excess whey.
