To prepare a delicious tart, start by preheating the oven to 200°C. This will ensure a perfect base for your pastry. While the oven is preheating, take a sheet of shortcrust pastry and lay it in a springform pan, making sure to use parchment paper to prevent sticking. It’s important to prick the bottom of the pastry with a fork, as this step will help avoid air bubbles forming during baking, which could compromise the appearance of your tarts. Once you have prepared the pastry, it’s time to add the filling. Choose a creamy cheese, such as cottage cheese or ricotta, and use a spoon to spread it evenly over the bottom of the pastry. Don’t worry if you don’t achieve a perfect layer, as the cheese will melt during baking, providing a delicious texture to your tart. In a separate bowl, beat a few eggs with cream, making sure to achieve a homogeneous mixture. You can add pesto to give a fragrant and fresh taste. This ingredient will add a note of intensity to the tart, transforming it into a special dish. Once the mixture is well combined, carefully pour it over the cheese in the pan. To close the tart, fold the edges of the pastry over the cheese and egg filling. This technique will not only add a rustic look but will also help keep the filling inside. Now it’s time to place the pan in the oven. Reduce the temperature to 180°C and let the tart bake for about 30 minutes, or until it becomes golden and appetizing. After you take the tart out of the oven, wait about 10 minutes to let it cool slightly before cutting it. This step is essential, as the tart will cut much better, thus avoiding the filling from spilling out. The tart can be served warm, but I recommend trying it cold as well, as the flavor will intensify and it will have a pleasant texture. Regardless of how you choose to serve it, this dish will surely please everyone!
