Grilled pork collar for a picnic

Grilled pork collar for a picnic is marinated in beer, and the slices brown on the grill with nicely colored edges. The pork collar sits in the fridge for an hour before grilling, and the slices brown on the outside and stay tender in the middle, just right for a picnic. I serve it with baked potatoes while it’s still hot. Prep: 10 minutes. Cook: 22 minutes. Rest: 1 hour and 3 minutes. Total time: 1 hour and 35 minutes. Servings: 6. Approximately 450 kcal and 30 g protein per serving.
Ingredients
- 6 pork collar steaks (approximately 900 g)
- 125 ml beer
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 1 teaspoon dried thyme
- 1 teaspoon sweet paprika
- 2 garlic cloves
Preparation
1. In a bowl, mix 125 ml beer with 3 tablespoons olive oil, 1 teaspoon salt, 1/2 teaspoon pepper, 1 teaspoon thyme and 1 teaspoon sweet paprika. Crush the 2 garlic cloves and add them to the marinade. 2. Add the 6 pork collar steaks and massage the marinade into them. Cover the bowl and refrigerate the meat for 1 hour. 3. Heat the grill or barbecue for 10 minutes, until the surface is very hot. 4. Remove the steaks from the marinade and shake them gently. Grill for 6 minutes on each side, until browned and the thickest part reaches 63°C. Let them rest for 3 minutes before serving.
Notes
The beer goes into the marinade uncooked; if you want to make it alcohol-free, replace the 125 ml with 125 ml sparkling water. Serve the pork collar with baked potatoes, like a steak cooked in a pan, but with grill marks. Slices of similar thickness cook evenly, while thicker ones need more time. Sometimes the garlic turns black before the middle is done; move the slices to the cooler edge of the grill. Cooked meat keeps in the fridge for up to 3 days.
Frequently asked questions
Can I use pork chops instead of pork collar?
Yes, choose slices about 2 cm thick and check them after 4 minutes on each side; pork loin dries out faster than pork collar.
What should I do if the pork collar has a bone?
Grill the slices for about 8 minutes on each side and check the temperature in the thickest part without touching the bone.
Can I make it on an electric grill?
Yes, set the grill to 220°C; the surface browns well, and you can check the temperature in the center of the meat.
