Vegetable and Curry Garnish

To make a delicious and flavorful side dish, start by peeling and slicing the carrots into thin rounds, making sure they are uniform for even cooking. Also, break the cauliflower into small florets so that it cooks quickly and evenly. Put water in a large pot, add a tablespoon of salt, and bring it to a boil. Once the water is boiling, add the carrots and cauliflower. Boil the vegetables for about 15 minutes or until they become tender, but do not overdo the boiling time as you want to maintain a pleasant texture. After boiling, drain the vegetables, but be careful to keep about 100-150 ml of the cooking water, as it will be used later to enrich the sauce. Meanwhile, in a frying pan, heat 30 g of butter and add 2 tablespoons of flour. Stir constantly to avoid lumps, allowing the flour to brown slightly. Add 1-2 tablespoons of curry, which will add an exotic flavor to your sauce. This combination of flour and curry will create the base of the sauce. After a few minutes, extinguish with 250 ml of cold milk. Mix slowly and gradually add the reserved vegetable water. Continue stirring over low heat, allowing the sauce to simmer gently until it starts to thicken, achieving a creamy consistency. Once the sauce is ready, add the boiled and drained vegetables, gently mixing to avoid crushing them. Also, add a small finely chopped onion and a handful of freshly chopped green parsley, which will provide an extra touch of freshness. Let the dish simmer on low heat, stirring gently without boiling, to allow the flavors to meld perfectly. Finally, taste and adjust with salt and pepper to your liking. This side dish is perfect to accompany any type of meat, from juicy steaks to grilled meat dishes. Serve it warm to enjoy all the flavors and textures, and be prepared to be appreciated for this delicious combination!
