Puff Pastry Cake, Diplomat Cream and Fruits

To prepare a delicious cake with puff pastry sheets and fruit cream, we will start by preparing the puff pastry sheets. It is important to ensure that they are baked evenly, so we will take care of each sheet individually. We preheat the oven to 200 degrees Celsius and place a sheet of parchment paper at the bottom of the baking tray. We take the first sheet of puff pastry and carefully place it on the parchment paper, being careful not to damage it. We bake the sheet for about 15-20 minutes or until it becomes golden and crispy. We repeat the process for the other sheets, allowing them to cool on a cooling rack. Meanwhile, we take care of the delicious cream that will fill the cake. In a medium bowl, we put the egg yolks and sugar, mixing them well. We bring the mixture to a boil over low heat, stirring constantly to prevent sticking. After it reaches a few boils, we take the pot off the heat and let the mixture cool slightly. In another container, we soak the gelatin in 100 ml of cold water for about 10 minutes. Once it has softened, we add it to the warm egg mixture, stirring vigorously to ensure it dissolves completely. After the cream has cooled to room temperature, we add the whipped cream and gently mix with a spatula to maintain the airiness of the cream. Finally, we add the chopped fresh fruits, such as strawberries, peaches, or blackberries, carefully mixing to disperse them evenly in the cream. Now that we have all the components, we can assemble the cake. We take the first sheet of puff pastry and place it on a serving platter. On top of this, we add a generous layer of cream, followed by the second sheet of puff pastry. We continue to alternate layers, adding another layer of cream on top of the second sheet and finishing with the third sheet of puff pastry. We cover the cake with a very thin layer of cream to smooth it out, and let it chill in the fridge for about an hour to firm up a bit. After the time has expired, we take the cake out of the fridge and prepare the whipped cream for decoration. Well-whipped cream will add a touch of freshness and an attractive look to the cake. We evenly cover the cake with whipped cream, and then decorate it with the remaining fruits or grated chocolate, as desired.
