Banana tiramisu, original recipe

Banana tiramisu has mascarpone cream and ladyfingers dipped in cold instant coffee, layered with banana slices. The cream stays dense, and the cocoa leaves a matte layer on top, visible when you cut into it; you can feel the ladyfingers between the soft layers of cream and fruit. I cut it into narrow pieces. Prep: 30 minutes. Cook: 0 minutes. Rest: 6 hours. Total time: 6 hours and 30 minutes. Servings: 8. Approximately 600 kcal and 10 g protein per serving.
Ingredients
- 4 egg yolks
- 150 g sugar
- 400 ml sweetened whipping cream
- 250 g mascarpone cheese
- 5-6 sachets of instant coffee
- 400 ml cold water
- 1 tablespoon brandy
- 40 ladyfingers
- 2 medium bananas (240 g)
- 5 g cocoa
Preparation
1. Beat the egg yolks with the sugar until the sugar dissolves and the mixture is smooth. 2. Beat the sweetened whipping cream until it holds stiff peaks; don’t add sugar. 3. Mix the mascarpone into the egg yolks, then add the whipped cream and gently combine. 4. Dissolve 5-6 sachets of instant coffee in 400 ml cold water and add the brandy. 5. Dip the ladyfingers in the coffee one at a time, just until they soften, without leaving them in the liquid. Arrange a layer of ladyfingers in the round dish, then cream and banana slices. Repeat the layers, finishing with cream. 6. Dust with cocoa and refrigerate the tiramisu for 6 hours.
Notes
Keep it covered in the refrigerator and eat it within 3 days. For a gluten-free version, replace the 40 ladyfingers with 40 gluten-free ladyfingers; regular ladyfingers contain gluten, and the cream contains dairy and eggs. Choose ripe but still firm bananas, so you can cut slices that hold their shape. If the instant coffee seems too bitter, use 5 sachets out of the 5-6 and keep the same amount of water. Add the brandy without heating it; for an alcohol-free version, use 1 tablespoon of apple juice instead. For an evening meal, chill the dessert in the morning; if you increase the quantity, use a wider dish, not a much deeper one. In the way it is arranged, it’s more like a charlotte with ladyfingers than a layered cake. You can serve it after unsweetened coffee.
Frequently asked questions
Can I use brewed coffee instead of instant coffee?
Yes. Use 250 ml strong coffee, completely cooled, instead of the instant coffee mixture.
How do I prevent mascarpone lumps?
Leave the mascarpone at room temperature for 15 minutes before mixing it with the egg yolks.
Why doesn’t the cream hold its shape?
The cream needs to be beaten until it holds stiff peaks. If it slides straight off the whisk, beat it for 1 more minute.
