Eggplants with Yogurt and Garlic Sauce

We wash the eggplants well under a stream of cold water, making sure to remove any impurities. Then, we start peeling them, but not completely. We proceed as follows: we peel the eggplants lengthwise, alternating between strips of skin and skinless portions, to create a pleasing appearance in the end. This technique not only enhances the aesthetic look but also helps retain the juices and flavors during cooking. After we finish peeling all the eggplants, we cut them into slices about 1-2 cm thick. Once we have the eggplant slices, we sprinkle salt on both sides of each slice, helping to draw out excess water and thus improving the texture and taste. Then, we place them on absorbent paper and let them drain for about 30 minutes. This step is essential to reduce the bitterness of the eggplant and to achieve even frying. Meanwhile, we prepare the yogurt sauce, which will add extra flavor to our dish. In a bowl, we crush a few cloves of garlic until they become a smooth paste. We add the yogurt, ideally Greek yogurt for a creamier texture, and mix well. Then, we finely chop a few sprigs of fresh parsley and incorporate them into the sauce. We season everything with salt and pepper to taste, then let the sauce cool in the refrigerator so the flavors can meld. After the eggplants have drained, we put a non-stick pan on the stove, adding a few drops of oil, just enough to prevent sticking. We heat the pan well, then add the slices of eggplant, letting them brown nicely on both sides for about 3-4 minutes. It is important not to overcrowd the pan, so that each slice fries evenly. Once the eggplants are ready, we remove them to a plate and arrange them in an even layer. On top, we generously pour the previously prepared yogurt sauce, allowing the ingredients to combine and create a delicious dish. This meal is not only light and quick but also perfect for a healthy meal, full of taste and flavor. Enjoy your meal!
