My Plum Dumplings, Noodles and Ears

To prepare delicious plum dumplings, the first step is to take care of the potatoes. Choose medium-sized potatoes with smooth skin, and wash them well under a stream of cold water to remove any impurities. After washing, place them in a large pot, add water and salt, then boil them with the skin on until they become soft. This process takes about 30-40 minutes, depending on the size of the potatoes. Once boiled, drain the water and let them cool completely so you can work with them without burning yourself. Once the potatoes have cooled, peel them and turn them into a fine paste using either a meat grinder or a special potato ricer. At this stage, it is important to add the oil, salt, and sugar, mixing well to obtain a homogeneous composition. Then, start gradually incorporating the flour, about 100 grams at first, and knead the dough. It is essential not to add all the flour at once, as the moisture of the potatoes can vary, and we want to achieve a soft, elastic dough that does not stick to your hands. When the dough is ready, form a roll and cut it into slices, which you will spread out on the work surface. Here, each slice will hold a plum, which you will place in the middle. Shape the slices of dough into balls, being careful to roll them lightly in flour to prevent sticking to the tray. Prepare a pot with water and salt, and when the water starts to boil, lower the heat and carefully add the dumplings. Let them simmer, and when they rise to the surface, you know they are ready. While the dumplings are boiling, prepare the breadcrumbs. Put them in a pan and fry them over low heat, stirring constantly to avoid burning. When the dumplings are cooked, remove them with a slotted spoon and roll them in the toasted breadcrumbs, making sure they are well coated. Place them on a platter and serve warm, sprinkled with powdered sugar. For a special touch, mix the sugar with cinnamon and dust the dumplings with this aromatic mixture. If you have leftover dough, don’t worry! You can create other delights. Form small rolls or spread the dough and cut it with a glass. These rounds can be filled with plum jam, folded in half, and the edges pressed with a fork for an attractive appearance. Boil them just like the dumplings, roll them in breadcrumbs, and serve with sugar. This way, you will transform a simple recipe into a delicious feast, perfect for any occasion!
