Nut Cookies

To prepare these delicious nut cookies, start by preparing the loaf or bread pans, essential for achieving the perfect shape. Grease them with oil, then sprinkle a little flour on the bottom and sides, or alternatively, you can line them with baking paper. This step is crucial to prevent the cookies from sticking, so do not skip it. Set the prepared pans aside to let the oil dry. In a large bowl, add the soft butter, sugar, and salt. Using an electric mixer or a spatula, mix the ingredients until you achieve a fluffy and airy cream, which will provide a soft texture to the cookies. Gradually incorporate the egg yolk, mixing continuously to ensure perfect homogenization. Then add the white wine, warm milk, and vanilla essence, continuing to mix until all ingredients are completely integrated. Sifting the flour is an important step, so take 200 g of flour and mix it with the baking powder, making sure there are no lumps. Add this mixture to the bowl with the wet ingredients and mix with a spatula or a wooden spoon. The dough should be compact and non-sticky; if necessary, add a few more tablespoons of flour until you achieve the desired consistency. Once the dough is ready, divide it into 2-3 parts to facilitate shaping. Take one part of the dough and roll it out on a floured work surface, forming a rectangular sheet about 2-3 mm thick. Make sure the edges are straight for an even appearance. Use a sharp knife to cut the sheet into strips, each approximately the width of a finger, and the appropriate length to fit the base of the pan. For added flavor and texture, brush the strips with egg white, then sprinkle the chopped nut and sugar mixture. Gently press the nuts into the dough so they stick well. Place the strips in the prepared pans, making sure to leave a little space between them to allow for expansion during baking. Repeat this process with the remaining dough. Preheat the oven to 180 degrees Celsius. Place the pans in the oven and bake for about 15-20 minutes, or until the cookies turn golden at the edges. It is important to watch them closely in the last minutes to avoid burning. Once baked, remove the cookies from the oven and let them cool slightly in the pans, then carefully transfer them to a rack, as they are very fragile. After they have completely cooled, store the cookies in containers with lids to maintain their freshness. Although they can be enjoyed immediately, I recommend letting them sit for a day so the flavors can intensify. These nut cookies will be a true delicacy that will delight the taste buds of your loved ones!
