Spinach and cheese puff pastry rolls are a puff pastry appetizer, with browned edges and leaves visible between the layers. The cheese melts inside, while the egg leaves a thin, well-browned crust on top. I dry the leaves carefully so no moisture gets between the pastry sheets. Preparation: 15 minutes. Cooking: 30 minutes. Resting: 30 minutes. Total time: 75 minutes. Servings: 4. Approximately 610 kcal and 24 g of protein per serving.

Ingredients

  • 400 g frozen puff pastry
  • 30 g spinach
  • 200 g grated cheese
  • 2 eggs

Preparation

1. Leave the frozen puff pastry sheet at room temperature for 30 minutes. Wash the spinach and let it dry thoroughly. 2. Preheat the oven to 200°C for 10 minutes and line a baking tray with parchment paper. 3. Unroll the pastry sheet, arrange the spinach and grated cheese evenly on top, then roll it up and cut into slices about 2 cm thick. 4. Place the slices on the tray and brush each one with the beaten eggs. Bake for 20 minutes, until the rolls are browned.

Notes

I serve them with a green salad with vinegar, for a plate that’s less heavy than puff pastry on its own. They keep in the refrigerator for up to 3 days in a closed container; once cooled, the pastry isn’t as crisp. I used a mix of grated cheeses from Lidl, and 200 g of grated semi-hard cheese can replace it without changing the quantity. The dish contains gluten, milk and eggs. Small spinach leaves are easier to arrange than very wide ones, and the thick stems on mature leaves can be removed. Finely grated cheese spreads more evenly; a coarse grate leaves larger pieces between the pastry sheets. The pastry sheet is easier to roll while pliable but still cold; if it feels soft to the touch, refrigerate it for 10 minutes. In shape, they look like mini cheese pies, except the filling appears in spirals between the layers of puff pastry.

Yes, use 40 g of frozen spinach after thawing and squeeze it well; weigh it after squeezing.

Why do the rolls come apart on the tray?

Place the rolled edge underneath and overlap the edges by about 1 cm, then brush the join with egg.

Can I cut thinner slices?

Yes, cut them to about 1.5 cm and check them after 16 minutes, as they may brown faster than the 2 cm ones.

Can I chop the spinach before putting it on the pastry sheet?

Yes, cut it into pieces about 1 cm across; the leaves will be distributed more evenly in each slice.
