Colcannon is a traditional Irish recipe that combines the delicate flavors of cabbage with the creamy texture of potatoes. This classic recipe has been reinterpreted by me, adding an international touch with the inclusion of Italian bolognese sausages and a beer sauce inspired by German cuisine. The result is a savory dish that blends diverse culinary traditions in a unique way. To start, boil the peeled potatoes in salted water, ensuring they become soft and easy to mash. Once the potatoes are ready, remove them from the water, but do not discard it. Use the same water to boil the finely shredded cabbage, allowing it to absorb the flavors of the potatoes. The cabbage should become tender but not overly soft. Meanwhile, in a separate pan, sauté the onion in butter, stirring constantly to brown it evenly. Add the milk and let the onion cook over low heat, covered, until it becomes translucent and soft. This combination of onion and milk will give a special flavor to the potato and cabbage mixture. Once the onion is ready, add the well-drained cabbage and the mashed potatoes, mixing everything together. Season with salt and pepper to taste, being careful to achieve a smooth and creamy mixture. This colcannon mash will be the delicious base for the bolognese sausages. As for the sausages, it is important to prepare them correctly. Before frying, prick them in several places with a toothpick to allow the fat to escape during cooking. Fry them in a pan, with or without oil, depending on your preferences (I prefer to fry them without oil, considering they are already quite fatty). Once the sausages are well browned, pour the beer over them and let it simmer until the beer reduces by half, stirring occasionally. To finish the sauce, add sour cream or milk along with the cornstarch or flour, stirring continuously until the sauce thickens. Salt and pepper will enhance the flavor, and the result will be a rich sauce that pairs perfectly with colcannon. It is important to choose a white cabbage, as I did, because it will not significantly affect the final appearance of the dish. While there may not be a big difference between cabbage and potatoes, the taste will certainly be memorable. This colcannon recipe with bolognese sausages and beer sauce will bring a special flavor to your table, offering a unique and comforting culinary experience. Enjoy every bite!
