Tagliatelle with mushrooms, sausages, and garlic tomato sauce

We start preparing this delicious pasta recipe with a rich sauce that will delight the taste buds. The first step is to put a pot of water and salt on the heat. It is essential to have enough water so that the pasta has room to cook evenly. When the water begins to boil vigorously, we add the pasta. It is important to adhere to the cooking time indicated on the package to achieve al dente pasta that does not turn into mush. After the pasta has boiled, we remove it from the heat and cover it with a lid, letting it rest for a bit. In the meantime, we take care of the sauce. In a saucepan, we add sliced fresh mushrooms, along with olive oil, water, and a pinch of salt. This mixture will provide an umami flavor to our sauce. We let the mushrooms simmer over medium heat until they begin to soften and release their delicious juice. Then, we cut some sausages into small pieces and add them to the saucepan, allowing them to brown slightly until most of the water has evaporated. The next step is to deal with the tomatoes. We take ripe, meaty, and juicy tomatoes, which we process in a food processor to obtain a fine tomato juice. This juice will add a note of freshness and acidity to our sauce. We add it to the saucepan along with a few tablespoons of tomato paste and mix well. To enhance the flavors, we add a teaspoon of paprika and dried herbs such as basil and oregano. We mix everything and let the sauce simmer on low heat until it thickens and the flavors combine harmoniously. Finally, we peel a few garlic cloves, wash them, and crush them, adding them to the saucepan mixture after it has cooled slightly. The garlic will add an intense and fragrant flavor to the sauce.
