Strawberry Muffins

You will need 2 cups of flour, 1 cup of sugar, 1 teaspoon of baking powder, ½ teaspoon of baking soda, a pinch of salt, 2 eggs, ½ cup of milk, ½ cup of vegetable oil, and of course, 1 cup of fresh strawberries, washed and cut into small pieces. In a large bowl, combine the dry ingredients: flour, sugar, baking powder, baking soda, and salt. Mix well to ensure all ingredients are evenly distributed. After mixing the dry ingredients, make a well in the center. Here, add the eggs, milk, and oil. Use a spatula or wooden spoon to gently mix, just enough to incorporate the flour. Don’t worry if the batter has a few lumps; that’s perfectly fine. The muffin batter doesn’t need to be completely smooth to achieve a fluffy and airy texture. Once you’ve finished mixing, add the chopped strawberries and mix again gently, being careful not to crush them. This step is essential to keep the fruit pieces intact so you can enjoy every fresh flavor during tasting. Next, prepare the muffin tin by placing paper liners in each cavity. Fill each mold about three-quarters full, leaving room for the muffins to rise during baking. Preheat the oven to 180 degrees Celsius and place the muffin tin in the oven. Let them bake for 20-25 minutes or until a toothpick inserted in the center of a muffin comes out clean. When they are ready, remove them from the oven and let them cool for a few minutes in the tin, then transfer them to a cooling rack.
