It is perfect for a special occasion or simply to treat yourself on an ordinary day. Start by preparing the whipped cream. Use 200 grams of heavy cream, which should be cold, and whip it with a mixer on medium speed until you achieve a firm foam. Make sure not to whip it too much, otherwise, it will turn into butter. Once the whipped cream is ready, set it aside to be incorporated later into the mousse mixture. Next, take the eggs out of the fridge about an hour before you start preparing. This step is essential, as room temperature eggs whip much better. Beat 3 eggs with 100 grams of sugar using a mixer until the mixture becomes creamy and doubles in volume. It is important to achieve an airy consistency, which will give your mousse a light and fluffy texture. In a small saucepan, place 10 grams of gelatin (prepared according to the package instructions) along with the zest and juice of one fresh lemon. Heat the mixture over low heat, stirring constantly, until the gelatin completely dissolves. Make sure it does not reach boiling point, as the gelatin will lose its properties. Once the gelatin has dissolved, let it cool slightly. Now, it's time to combine all the ingredients. Take the bowl with the beaten eggs and gradually add the whipped cream, mixing with a spatula to keep the air in the mixture. Then add the warm (but not too hot) gelatin and mix carefully until everything is homogenized. Once the mixture is well combined, pour it into glasses or individual bowls. Make sure to fill them only up to ¾ of their capacity to leave room for the mousse to rise slightly as it cools. After you finish, place them in the fridge for at least an hour to set. To serve, you can add a thicker syrup, such as blueberry syrup, or melted chocolate for an extra flavor and decadent texture. Try to decorate each portion with a few fresh fruits or a mint leaf for a more attractive appearance.
