Chocolate and Coffee Cake with Glaze

To prepare a delicious and fluffy cake, start by gathering all the necessary ingredients. Make sure you have on hand: 200 ml of water, good quality chocolate cut into small cubes, cocoa, sugar, butter at room temperature, 4 egg yolks, egg whites from 4 eggs, flour, and baking powder. In a saucepan, add the water, chocolate cubes, cocoa, and, if desired, instant coffee. Place the saucepan over low heat and stir constantly, being careful not to burn the mixture. Allow the ingredients to melt completely, then turn off the heat and let the mixture cool well. In a bowl, separate the egg whites from the yolks. Use a mixer to beat the butter until creamy, then add the 4 yolks and continue mixing until the mixture is light and fluffy. Once the chocolate mixture has cooled, add it to the butter and egg cream. Mix again to ensure good homogenization. After obtaining a uniform mixture, take ¾ of it and pour it into a container, which you will store in the refrigerator. This quantity will constitute the cake's glaze. In the remaining bowl, add the flour mixed with baking powder and mix well. Then, beat the egg whites until stiff and fold them into the above mixture, using a spatula and mixing from top to bottom to avoid losing air from the egg whites. Prepare a baking tray by greasing it with butter and sprinkling it with flour or fine breadcrumbs. Pour the obtained mixture into the tray and level the surface. Preheat the oven to 180°C and bake the cake for about 35-40 minutes, testing it with a toothpick to check if it is baked. When ready, let it cool completely before adding the glaze. The glaze, kept in the refrigerator, will be thick but creamy due to the yolks. Once the cake has cooled, pour the glaze evenly on top and let it set a little. Your cake will be fluffy and delicious, perfect to be enjoyed alongside a cup of coffee or tea. Savor each piece and enjoy the delicious combination of chocolate!

- 1 cup of granulated sugar
- 100 g of dark chocolate
- 2 tablespoons of unsweetened cocoa
- 1 tablespoon of instant coffee / you can also use 1-2 tablespoons of espresso (so concentrated)
- 200 g of butter
- 4 eggs
- 1 cup and 1/4 of cake flour
- 2 teaspoons of baking powder.
