Mini Tarts with Ricotta, Mascarpone, and Berries

To prepare a delicious berry tart, start by making the dough. In a large bowl, combine the flour with cold diced butter, sugar, and a pinch of salt. Use a mixer or, if you prefer, knead with your hands until the mixture has a texture similar to wet sand. Gradually add the egg and a tablespoon of cold water, mixing continuously until you obtain a homogeneous dough. Once the dough is ready, form a ball, wrap it in plastic wrap, and let it rest in the refrigerator for 30 minutes. After the time has expired, take the dough out of the refrigerator and roll it out on a lightly floured surface until you get a sheet about 3-4 mm thick. Use a knife or a scraper to cut the dough into shapes suitable for the tart. Place each shape on a baking tray lined with oil and flour, ensuring that the dough fits perfectly into each cavity. Prick the base of each shape with a fork to prevent puffing during baking. Preheat the oven to 180 degrees Celsius and bake the tart shapes for about 15 minutes or until they turn golden and crispy. Once baked, remove them from the oven and let them cool completely on a cooling rack. Meanwhile, you can prepare the cream that will fill the tart. Use a combination of mascarpone cheese, cream, and sugar, beating them together until you obtain a creamy and homogeneous mixture. If desired, you can add a little vanilla extract for extra flavor. Once the tart shapes have cooled, fill each shape with the prepared cream, ensuring it is evenly distributed. To finish the dish, sprinkle fresh berries on top, such as raspberries, blackberries, or blueberries, arranging them nicely to add an attractive appearance. Dust a little powdered sugar over the berries to give them a shiny look and a sweet-tart taste. Serve the tart at room temperature or chilled, to enjoy a refreshing and tasty dessert, perfect for any occasion. This berry tart is not only a delight for the taste buds but also a true visual pleasure!
