Doughnuts with Cinnamon, Sesame and Honey Syrup

To prepare these delicious fried balls, we start by creating a well-leavened dough. In a large bowl, we combine 500 g of flour with a packet of dry yeast, 100 g of sugar, a pinch of salt, and the grated zest of a lemon. These ingredients are mixed well, and then we add 250 ml of warm milk and 50 ml of oil. We will knead the dough for 10-15 minutes until it becomes elastic and smooth. Once we finish kneading, we cover the bowl with a clean towel and let the dough rise in a warm place for about an hour, or until it doubles in volume. Once the dough has risen, we prepare to shape the balls. With oiled hands, we take pieces of dough and shape them into balls about 3-4 cm in diameter. We place the balls on a baking tray lined with parchment paper, making sure to leave enough space between them to expand during frying. We let the balls rise for another 20 minutes, covering them again with a towel. Meanwhile, we prepare the honey syrup. In a small pot, we put 200 g of honey and 100 ml of water, then we heat them over low heat, stirring constantly, until the syrup becomes homogeneous. We do not let it boil, just thickens slightly. Once the syrup is ready, we remove it from the heat and let it cool slightly. In a deep pan heated with oil, we fry the balls one by one until they become golden and crispy on the outside. It is important not to overcrowd them in the pan, so they fry evenly. Once they are done, we take them out onto an absorbent paper towel to remove excess oil. Finally, we pour the warm honey syrup over the fried balls, making sure each ball is well coated. On top, we sprinkle freshly ground cinnamon and, depending on preferences, sesame seeds or ground nuts. These fried balls with honey syrup are a true delight, perfect to be served alongside a cup of tea or coffee, bringing a touch of sweetness to each day.
