Biscuit cake with chocolate cream

Biscuit cake with chocolate cream is layered and chilled for a few hours before slicing. Biscuits dipped in hot chocolate alternate with the cream, with wafers in the middle under a dark chocolate glaze. I prefer rectangular biscuits with sides that are as even as possible. Prep: 30 minutes. Cook: 5 minutes. Rest: 4 hours and 20 minutes. Total time: 4 hours and 55 minutes. Serves: 12. Approximately 750 kcal and 11 g protein per serving.
Ingredients
- 400 g whipping cream
- 400 g cream cheese
- 2 tablespoons powdered sugar
- 400 g Fineti
- 1 sachet hot chocolate
- 100 ml water
- 450 g biscuits
- 200 g wafers
- 200 g dark chocolate
- 4-5 tablespoons milk
Preparation
1. Beat the whipping cream for 4 minutes, until it holds its shape. 2. Beat the cream cheese with the powdered sugar for 2 minutes, then fold in the whipped cream. Mix three quarters of the cream with Fineti and set the rest aside plain. 3. Heat 100 ml water in a small saucepan for 2 minutes, until it starts to steam. Make the hot chocolate from the sachet and leave it for 10 minutes to cool. 4. Dip the biscuits in the hot chocolate one at a time. Spread the Fineti cream on one side and arrange the biscuits in a circle in a round springform pan, in three rows, with cream between them. Add a layer of plain cream, a row of wafers and another layer of plain cream. Continue with biscuits and Fineti cream until the pan is full. 5. Cover the top with the Fineti cream. Melt the dark chocolate with the milk in a bowl set over a saucepan of gently simmering water, for about 3 minutes, until smooth. Leave it to cool for 10 minutes, then spread it over the cake and let a little run down the sides. 6. Crumble a few biscuits and arrange them in a little crown on top of the cake. Sprinkle crumbled biscuits around the sides and grate a little chocolate in the center. Refrigerate the cake for 4 hours, until the layers hold together when sliced.
Notes
For layers that hold together well, choose plain, firm biscuits; thin ones, especially tender ones, soften quickly. The cream cheese should be dense, not too soft and easy to spread, so the filling does not ooze out when sliced. I serve it with unsweetened coffee. You can make it a day ahead and keep it covered in the fridge for up to 3 days. You can replace Fineti with the same amount of hazelnut spread; the cake contains gluten, dairy and hazelnuts.
Frequently asked questions
Can I use milk for the hot chocolate sachet?
Yes, use 100 ml milk instead of water and let the drink cool before dipping the biscuits.
Which digestive biscuits work here?
You can use 450 g digestive biscuits. Dip them briefly in the hot chocolate so they do not get too soft.
What can I use instead of wafers?
Put 200 g coarsely broken crisp biscuits in the middle layer; the texture will be a little different.
Can I use milk chocolate for the glaze?
Yes, use 200 g. The glaze will be sweeter than with dark chocolate.
Why do the slices not hold together when I cut the cake?
If the middle still moves, chill the cake for another hour before slicing.
