Tofu patties with carrot sauce

Roasted almonds go into tofu patties with carrot sauce, baked until golden and served with carrots and wild garlic. Pepper tofu and smoked tofu give the patties a soft texture, while the sauce has tender carrots and green wild garlic. I leave the ground almonds a little coarse so you can feel their texture in the mixture. Prep: 20 minutes. Cook: 32 minutes. Total time: 52 minutes. Serves: 4. About 520 kcal and 30 g protein per serving.
Ingredients
- 300 g pepper tofu
- 300 g smoked tofu
- 100 g roasted almonds
- 75 g breadcrumbs
- 1/4 teaspoon salt
- 1/2 teaspoon ground pepper
- 2 medium carrots (200 g)
- 2 medium onions (300 g)
- 100 ml water
- 2 tablespoons oil
- 3 tablespoons curry paste
- 1 bunch wild garlic (50 g)
Preparation
1. Crumble both types of tofu into a bowl. Grind the roasted almonds in a food processor, add them to the tofu along with the breadcrumbs and mix. Add the pepper and, if needed, 1/4 teaspoon of salt. 2. Shape the patties and arrange them on a baking tray lined with parchment paper. Bake at 200°C for 20 minutes, until golden. 3. Peel the carrots and onions, then cut them into small pieces. Chop the wild garlic and set half aside for serving. Put the carrots, onions and 25 g of wild garlic in a pan with 100 ml water and 2 tablespoons of oil; cook for 8 minutes. 4. Add the curry paste and cook for another 4 minutes, stirring, until the carrots soften a little. Sprinkle with the reserved wild garlic and serve the sauce with the patties.
Notes
Small patties brown more quickly; leave larger ones in the oven until the edges start to colour. The tofu and roasted almonds may already be quite salty, and salt levels vary between products, so taste the mixture before adding more salt. Plain rice goes well with them, as it soaks up the carrot sauce. For a nut-free version, replace the almonds with the same amount of ground sunflower seeds; the breadcrumbs can be replaced with the same amount of gluten-free breadcrumbs. Almonds are allergens, and regular breadcrumbs contain gluten; keep the patties in the fridge for no more than 3 days.
Frequently asked questions
What should I do if the patty mixture is too soft?
Mix in 1 tablespoon of breadcrumbs at a time, until you can shape the mixture without it sticking too much.
Can I use almond flour instead of whole almonds?
Yes, use 100 g of almond flour and mix it straight into the tofu and breadcrumbs, without putting it through the food processor.
How can I thicken the sauce if it is too runny?
Let it simmer uncovered for another 5 minutes, stirring from time to time.
