When I had a small red cabbage left over from another recipe in the fridge, I tried this combination with trout on cabbage for the first time. I didn't know what to expect, but it turned out surprisingly well, especially with the mix of white and red cabbage. Clean the trout and wash them well. Sprinkle salt, paprika, and a little thyme over them. Set them aside while you prepare the vegetables. 2. Chop the onion and bell pepper as finely as possible. Place the butter in an oven-safe dish and sauté the onion and bell pepper with a little water, just enough to soften them. Stir frequently to prevent sticking. 3. Finely shred the white and red cabbage. Place them in a bowl, add the lemon salt, and massage them with your hands for a few minutes until they soften slightly. 4. Add the tomatoes in puree to the onion and bell pepper, then add the white and red cabbage. Mix everything well in the dish. 5. Pour in the glass of water. Cover and let it simmer on low heat (or in the oven at a low temperature) for about 30 minutes, until the cabbage starts to soften. 6. After the cabbage has partially cooked, add salt, thyme, pepper, ground cumin, and crushed garlic. Mix well. 7. Arrange the trout on top of the cabbage as evenly as possible.
