In a large pot, add salted milk, which can be made from a combination of ½ milk and ½ water or just water, depending on your preferences. Add 2 tablespoons of olive oil or sunflower oil to enhance the flavor and prevent the potatoes from sticking to the bottom of the pot. Place the pot over medium heat and bring the liquid to a boil. Add the potato cubes to the pot and let them boil for about 20-30 minutes. It is important to check periodically with a fork to see if they are done. The potatoes are cooked when they can be easily mashed. This step is essential for achieving a smooth and silky puree. Once cooked, drain the potatoes, but do not discard the liquid they cooked in. This can be used to adjust the consistency of the puree. Add pieces of high-quality butter to the cooked potatoes and, using a manual masher, mash them until they become a homogeneous and creamy mixture. Start gradually adding warm milk or cream, homogenizing the mixture each time until you reach the desired texture. The puree should be soft but not too liquid. Season with salt to taste, being careful not to overdo it, as the salted milk also adds flavor. To give the puree a distinct note, add a few drops of organic apple cider vinegar. This will bring a pleasant contrast and enhance the flavors. Mix well and whip the mixture with a whisk or spatula until it becomes frothy and airy. This mashed potato is perfect to accompany a variety of main dishes, such as roasted meat, steaks, or vegetables, being a versatile side dish appreciated by everyone.
