Kedgeree with fish, green beans and spinach

Kedgeree with fish, green beans and spinach brings smoked trout and rice together in a spiced pan. The rice soaks up the quick cream sauce, with lemon zest added at the end; I like to put the soft-boiled egg, cut in half, right on top while the yolk is still runny. Prep: 20 minutes. Cook: 24 minutes. Rest: 10 minutes. Total: 54 minutes. Serves: 4. About 420 kcal and 28 g protein per serving.
Ingredients
- 500 g smoked trout
- 250 ml water
- 100 g long-grain rice
- 200 ml water
- 3 eggs
- 1000 ml water
- 1 tablespoon butter
- 1 cinnamon stick
- 2 bay leaves
- 1/4 leek or 1 medium onion (150 g)
- 2 garlic cloves
- 1 teaspoon fennel seeds
- 1/4 teaspoon turmeric
- 1/4 teaspoon chili flakes
- 60 ml fish stock or water
- 100 g green beans
- 20-25 ml cooking cream
- 200 g fresh spinach
- 1 teaspoon salt
- zest of 1 lemon
Preparation
1. Put the smoked trout in a saucepan with 250 ml water and boil for 4 minutes. Lift it onto a plate, discard the water and break the fish into pieces. 2. Boil 100 g rice in 200 ml water for 8 minutes, until tender. Leave it to cool for 10 minutes. 3. Boil the eggs in 1000 ml water for 4 minutes, then remove them from the pan. Heat the butter in a frying pan over medium heat and cook the cinnamon stick, bay leaves, chopped leek or chopped onion, chopped garlic and fennel seeds for 3 minutes, until lightly browned. 4. Turn the heat down low, add the turmeric and chili flakes and stir for 20 seconds. Turn the heat up, pour in 60 ml fish stock or water and add the green beans. Cook for 4-5 minutes, until the beans are tender and the liquid has evaporated. 5. Stir in 20-25 ml cooking cream and cook for 1 minute. Add the spinach and 1 teaspoon salt, then take the pan off the heat. 6. Add the trout, zest of the lemon and cooled rice to the pan. Mix well and serve with the soft-boiled eggs.
Notes
Cool leftovers before putting them in a sealed container; keep in the fridge for no more than 3 days and reheat only the portion you need. A tangy cucumber salad goes well with the spiced rice. For a dairy-free version, swap the butter for 15 ml oil and the cream for 25 ml coconut cream; fish, dairy and eggs are allergens in this dish. Smoked trout can vary a lot in saltiness, so taste the mixture before adding salt. Remove any skin and remaining bones before breaking the fish into pieces. Wide or thick green beans may need another minute in the pan compared with thin ones. Mature spinach leaves take longer to wilt than baby spinach. I take the cinnamon stick out of the pan before serving, so it doesn’t end up on someone’s plate.
Frequently asked questions
Can I use fresh trout instead of smoked?
Yes. Poach 500 g skinless fillet for 6-8 minutes, until the flesh turns opaque.
Can I swap the green beans for peas?
Yes, add 100 g frozen peas to the pan for the last 2 minutes of cooking.
Why has the rice clumped together?
Spread it out in a thin layer on a tray and leave it to cool there for 5 minutes before mixing it with the rest.
Can I use ground cinnamon instead of a cinnamon stick?
Yes, add 1/4 teaspoon ground cinnamon with the turmeric, not at the start of cooking.
What should I do if the mixture has turned out too dry?
Stir 15 ml hot water into the pan, just enough to loosen the rice and bring it back together with the sauce.
