We grease two ceramic dishes with oil, or one larger dish in which we will pour the mixture. We evenly distribute the mixture in the two dishes, making sure it is level. On top, we sprinkle the remaining grated cheese, and for added flavor, we add a bit of rosemary and a few slices of bell pepper, which will not only add color but also a sweet taste. We preheat the oven to a medium temperature, then place the dishes with zucchini inside. We let them bake until the zucchini develops a golden crust and the entire mixture is nicely browned. This will take about 25-30 minutes, but it is good to check from time to time. Once ready, we remove the dishes from the oven and let the dish cool slightly before serving.
