For 10 large buns, you will need quality ingredients and a bit of patience, but the result will be worth the effort. Start by putting the water and milk in a bowl, then heat them in the microwave for about 30 seconds. These warm liquids will activate the yeast, so crumble the yeast on top of them. Add the sugar and salt, mixing well to dissolve the ingredients. In another bowl, put the flour, making sure to incorporate it well with a whisk to avoid lumps. After mixing the flour, pour the warm liquids over it and use a fork to form a dough. Now, transfer the dough to a surface sprinkled with a little leftover flour and start kneading. This step is essential to develop the gluten in the dough, so knead for 8-9 minutes, gradually incorporating the flour. Once the dough becomes elastic and smooth, place it in a bowl where you have added a tablespoon of olive oil. Coat the dough and the bottom of the bowl with oil, cover it with a clean towel, and let it rise in a warm place for an hour. In the meantime, preheat the oven to 180°C (gas mark 4). Garlic will add flavor to the buns, so do not peel it, but crush it lightly and place it in a tray covered with aluminum foil. Add a little olive oil, salt, and spices to taste. Bake the garlic for 10 minutes, then turn off the oven and let it cool slightly. Once cooled, peel the garlic and place it in a blender along with the onion. Pulse until you get a fine mixture. After the dough has risen, sprinkle a little flour on a clean surface. Press gently and roll out the dough, then add the onion and garlic mixture, kneading gently to incorporate it. Divide the dough into 10 equal pieces, forming balls. Arrange them on a tray covered with aluminum foil, leaving at least 5 cm of space between them, as they will increase in size. Cover the buns with a clean towel and let them rise for 40 minutes. After they have risen, preheat the oven to 190°C (gas mark 5). Before placing them in the oven, brush the surface of the buns with a beaten egg and sprinkle sunflower seeds for a crunchy look. Bake the buns for 20-25 minutes, or until they are golden and browned. After baking, let them cool at room temperature before serving. You will get fluffy, flavorful buns, perfect to be enjoyed alongside various dishes.
