Oven-baked chicken legs with onions and carrots

Oven-baked chicken legs with onions and carrots roast together, with the edges of the white and red onions browning in the pan alongside the carrots cut into large pieces. With garlic and chicken seasoning, the legs develop a golden crust while the vegetables soften and soak up the juices from the bottom of the pan. I serve them with rice and put the hot sauce on the side. Prep: 20 minutes. Cook: 55 minutes. Total time: 75 minutes. Serves: 4. About 420 kcal and 32 g protein per serving.
Ingredients
- 4 whole bone-in chicken legs
- 1 tablespoon Kotányi chicken seasoning blend
- 1 medium white onion (150 g)
- 1 medium red onion (150 g)
- 2 medium carrots (200 g)
- 3 garlic cloves
- 15 ml oil
Preparation
1. Pat the chicken legs dry with paper towels, then coat them with the chicken seasoning blend. 2. Peel the onions, carrots and garlic. Cut the onions and carrots into large pieces, and leave the garlic cloves whole if you like. 3. Pour the oil into a roasting pan, arrange the chicken legs in it and tuck the vegetables between them. 4. Bake at 200°C for 55 minutes, until the chicken legs are browned and the meat next to the bone is cooked through.
Notes
I serve them with rice and salad, and put the hot sauce on the side. Store any leftovers in a covered container in the fridge for up to 3 days. Choose chicken legs of a similar size; larger ones may need another 5-10 minutes, and the meat next to the bone should be cooked through. Cut firm carrots a little thinner than the onions, even though the vegetables should remain in large pieces. I don’t take the pan out at the first hint of browning: the skin gets a more even color if I leave it in for a few more minutes.
Frequently asked questions
How can I check that the chicken is cooked through to the bone?
A thermometer inserted into the thickest part without touching the bone should read 74°C.
Can I use drumsticks only?
Yes. At 200°C, drumsticks need about 45-50 minutes, depending on their size.
Can I replace the whole chicken legs with boneless thighs?
Yes, but the cooking time is shorter: start checking them after 35 minutes at 200°C so they don’t dry out.
