Cheese and passion fruit cake

The cookies are finely crushed until they become powder, and then mixed with melted butter, resulting in a homogeneous and slightly sticky mixture. This will form the delicious base of our cake. Using a springform pan or a cake pan, the cookie and butter mixture is pressed into an even layer. It is important to press well so that we obtain a compact and stable crust. After finishing this step, we place the pan in the refrigerator for about 30 minutes, during which the crust will harden and become perfect for supporting the cream. In the meantime, we prepare the delicious cream. The whipping cream is beaten with sugar and vanilla powder until a firm and fluffy consistency is achieved. It is ideal to use cream with a high fat content to obtain a stable and creamy whipped cream. We continue to beat until firm peaks form, being careful not to overbeat, as the whipped cream can turn into butter. Once the whipped cream is ready, we add the mascarpone cheese, gently folding with a spatula to avoid losing the incorporated air. It is essential to perform this step delicately to achieve a fine and airy texture. Once the cream is ready, we take the pan out of the refrigerator and carefully pour the whipped cream and mascarpone mixture over the cookie layer. Using a spatula, we level the cream evenly, ensuring it reaches the corners of the pan. After spreading the cream, we let the cake chill for a few hours, ideally overnight, so that the flavors blend perfectly and the cream sets. For an elegant finish, we can add a layer of melted chocolate or a berry sauce on top of the cake, bringing a contrast of flavors and colors. When we are ready to serve, we cut the cake into beautiful slices and decorate it with some fresh fruits or mint leaves, providing an attractive and appetizing appearance. - 500 g of cream cheese 5 or 9% --> I used 750 g 9% because I used gelatin
- 40 g of instant pudding powder --> I used 1 packet of gelatin + 1/2 cup of cold milk
- grated zest of 1 lemon or orange. For fruit gelatin: 8 passion fruits
- 2 tablespoons of sugar
- 60 ml water
- 3 teaspoons of gelatin
- about 8 g. You can also add other fruits: strawberries
