Creamy mushroom orzo

Creamy mushroom orzo is cooked in one pan with browned mushrooms, garlic, thyme and Parmesan. The orzo turns soft and glossy in savory broth while still holding a little bite, and the mushrooms stay in distinct, browned pieces. It takes about 42 minutes from start to finish and serves four; I stir in the cheese just before serving. Prep: 15 minutes. Cook: 27 minutes. Total time: 42 minutes. Serves 4. Ingredients
For the orzo
- 2 tbsp olive oil
- 350 g mushrooms (sliced)
- 1 tbsp unsalted butter
- 1 onion (finely chopped)
- 2 garlic cloves (minced)
- 1 tbsp fresh thyme (chopped)
- 250 g orzo
- 700 ml vegetable stock
- 1/2 tsp fine salt
To finish
- 50 g Parmesan (finely grated)
- 2 tbsp unsalted butter
- 2 tbsp fresh parsley (chopped)
- 1/4 tsp black pepper
Preparation
1. Heat 2 tbsp olive oil in a large, deep skillet over medium-high heat. Add 350 g sliced mushrooms and cook for 8 minutes, stirring once or twice, until browned and their liquid has cooked off. Transfer to a plate. 2. Reduce the heat to medium. Add 1 tbsp unsalted butter and 1 finely chopped onion; cook for 4 minutes, until softened. 3. Stir in 2 minced garlic cloves and 1 tbsp chopped fresh thyme for 30 seconds. Add 250 g orzo and stir for 90 seconds, until the pasta smells lightly toasted. 4. Pour in 700 ml vegetable stock and add 1/2 tsp fine salt. Bring to a gentle simmer and cook for 11 minutes, stirring often, until the orzo is tender and most of the stock is absorbed. 5. Stir in the mushrooms, 50 g finely grated Parmesan, 2 tbsp unsalted butter, 2 tbsp chopped parsley and 1/4 tsp black pepper. Cook for 2 minutes, stirring until glossy, then serve.
Notes
Cremini or white button mushrooms both work; slice them evenly, and let their moisture cook off before adding the onion. A wide, deep skillet gives the orzo room to simmer, and a narrow pan may need more frequent stirring near the end. You can use 50 g finely grated pecorino instead of Parmesan, though it tastes saltier. This dish contains wheat and dairy. Serve it with a sharp green salad. Refrigerate leftovers within two hours and use within 3 days; reheat gently with a splash of stock, since the pasta thickens as it sits.
Frequently asked questions
Can I use dried thyme?
Yes. Use 1/2 teaspoon dried thyme in place of the tablespoon of fresh thyme, and add it with the garlic.
Can I use arborio rice instead of orzo?
Not as a straight swap. Arborio rice needs stock added in ladlefuls over roughly 18 minutes, so the result is closer to risotto than this one-pan orzo.
What should I do if the orzo gets too thick before serving?
Stir in 2 tablespoons hot stock off the heat, then serve while it’s still loose; it thickens quickly as it sits.
