Using a mixer, we start beating the egg whites at medium speed, gradually increasing the speed until we achieve a fluffy meringue that forms stable peaks. When the meringue is ready, we turn our attention to the yolks. We mix the Mascarpone cheese with the yolks until we obtain a smooth, fine, and delicious cream. We add the brandy to the mixture and continue mixing to ensure the flavors combine perfectly. It is important to note that the brandy not only adds a refined note to the dessert but also contributes to the safety of the preparation, acting as a disinfectant for the uncooked eggs. Using a pear-shaped whisk, we carefully start to fold the beaten egg whites into the cheese cream, using circular motions from bottom to top to keep the air in the mixture and achieve a fluffy texture. Once the cream is well homogenized, we put it in the refrigerator to cool and intensify the flavors while we prepare the fruits. We cut the fresh fruits into cubes or slices, depending on preference, choosing the most flavorful and colorful ones to add a pleasant contrast to the dessert. With a thin-bladed knife, we create chocolate decorations, forming spirals or curls that will add an elegant touch to the dish. It is recommended that the chocolate be at room temperature, preferably kept in a warm place, such as the kitchen, for easier handling. We assemble the dessert in elegant glasses, starting with a layer of Savoiardi biscuits soaked in orange juice, which will absorb the citrus flavor. We continue with a layer of cut fruits, followed by a generous layer of cream. We repeat this structure, ensuring each layer is even. Finally, we decorate with chocolate curls and, if desired, add a little fresh mint for a pop of color. The dessert is now ready to be enjoyed. Bon appétit!

We assemble the dessert in glasses, starting with a layer of Savoiardi biscuits soaked in orange juice, especially for those who do not prefer coffee in the original Tiramisu recipe. We continue with a layer of cut fruits and then a layer of cream, repeating the arrangement in the same order once more. It is served cold after being in the fridge for about 2 hours!
