Simple Buckwheat Pilaf with Mushrooms

Salad - Simple Buckwheat Pilaf with Mushrooms by Gratiela A. - Recipia

Buckwheat is a versatile and healthy ingredient that adds flavor and nutrition to any meal. To create a delicious and aromatic recipe, start by boiling the buckwheat. In a pot, add salted water and let it boil. Once the water is boiling, add the buckwheat and let it cook for about 15-20 minutes, until it becomes soft but does not turn into mush. When ready, drain the buckwheat and set it aside, covered, to keep it warm. Meanwhile, prepare the mushrooms. Choose fresh mushrooms, preferably champignon or porcini, which will add a rich flavor to the dish. Carefully clean them, slicing the caps and finely chopping the stems. In a pan, heat oil over medium heat and add the mushrooms. Sauté them, stirring periodically, until they release their juices and the liquid reduces almost completely. By adding dried herbs such as basil, oregano, and thyme, the aroma of the dish will be intensified. After a few minutes, add the finely chopped onion. Continue to sauté them together until the onion becomes translucent and soft. Finally, season with a little salt and incorporate half of the finely chopped fresh parsley to add freshness. Once the buckwheat is cooked and the mushrooms are ready, it's time to combine them. Place the warm buckwheat in the pan, add the toasted nuts if you choose to include them, and the butter. Gently mix using a spatula by folding to avoid crushing the buckwheat. It's important not to overmix, as the buckwheat can turn into paste. Cover the pan and let everything cook on low heat for another 2-3 minutes to allow the flavors to meld. Before serving, taste the dish and adjust the level of salt and pepper to your liking. Buckwheat is served warm, as a main dish or as a side to various meals, but it is also delicious cold, making it an excellent choice for buffet or picnic meals. Accompany the dish with pickles, which will add a pleasant contrast of textures and flavors. Generously sprinkle the remaining fresh parsley on top for an attractive presentation and an extra touch of freshness. This recipe is not only delicious but also healthy, being rich in essential nutrients.
