Homemade Ravioli with Pumpkin and Mushrooms

To prepare delicious ravioli, we start by gathering the necessary ingredients. We put the flour in a large bowl, add a teaspoon of salt, and gradually start pouring in water. It is important to mix the ingredients well to obtain a homogeneous mixture. Once we have achieved this, we begin to knead the dough, being careful to add water gradually until we obtain a non-sticky dough. This operation should take about 10 minutes. Once the dough is well kneaded, we continue to knead it a little more, then wrap it in plastic wrap and let it rest in the refrigerator for about half an hour to make it easier to work with. Meanwhile, we take care of the filling. We clean the mushrooms, wash them well, and bring them to a boil in salted water to remove any impurities. We cut the zucchini into small cubes, which will be sautéed in hot oil for a few minutes until they become slightly golden and tender. We add the mushrooms, drained and finely chopped, along with minced garlic and chili pepper if we want a spicy note. We season the filling to taste, adding finely chopped parsley, and then let it cool. After finishing the filling, we return to the dough. We dust the work surface with flour, take the dough out of the refrigerator, and remove the plastic wrap. Breaking off a piece of dough, we flatten it with our hands, then use a rolling pin to obtain a thin sheet. From this sheet, we cut circles using the mouth of a glass. In the middle of each circle, we place a teaspoon of filling, then fold the circle in half, carefully enclosing the filling. The edges are pressed either with a finger or with a fork to seal them well. I prefer to use a fork, which I first dip in flour to prevent sticking. After forming all the ravioli, we arrange them in rows, letting them rest a bit while we put a pot of water to boil. When the water starts to bubble, we reduce the heat and introduce the ravioli, letting them bathe for one minute. Then, we take them out with a spatula and serve them as preferred: plain, with cheese, or with delicious sauces. We chose to serve them with a spicy pumpkin sauce made from two slices of boiled pumpkin along with a chili pepper. After draining the water, we blended everything, seasoning to taste and letting the sauce simmer for two minutes. Thus, we obtained a savory and aromatic meal, perfect for any occasion.

  • For the dough: 250g rye flour
  • 1 teaspoon salt

  • 2 cloves garlic
  • 100g wild mushrooms (they are called opintici in my area
  • in other places they are also called ghebe) 1/2 hot pepper
  • 1 small onion
  • 1/4 teaspoon nutmeg
  • 5 sprigs of fresh parsley
  • salt
  • pepper
  • 2 tablespoons oil. Spicy pumpkin sauce: 2 slices of pumpkin
  • 1 hot pepper.
