In a saucepan, we add water and sugar, then place it over medium heat. When the mixture reaches boiling point, we add the ground coffee, stir well to combine, and then remove the saucepan from the heat. It is important to let the coffee cool completely, as it will help us achieve a perfectly textured dessert. Meanwhile, we take care of the delicious cream that will complement this cake. In a large bowl, we whip the heavy cream until we achieve a firm yet airy consistency. In another bowl, we beat the egg yolks with the sugar until they become a fine, light-colored cream. Then, we gradually add the mascarpone, continuously mixing to avoid lumps. Once we have a smooth and velvety cream, we begin to carefully fold in the whipped cream prepared earlier, using a spatula to keep the air in the mixture. Now that we have the cream and coffee ready, we can move on to assembling the cake. In a bowl, we prepare 20 ladyfingers, which we will quickly dip in the strained cold coffee, being careful not to let them soak excessively, so they do not fall apart. We arrange these ladyfingers in two rows on a tray, thus forming the base of our cake. Over them, we apply a generous layer of cream, spreading it evenly. The next step is to add a new layer of ladyfingers, this time 18, which will again be dipped in coffee, and then another layer of cream. To finish the dish, we leave some cream for decoration. We generously sprinkle cocoa over the last layer of cream, giving it an elegant and attractive appearance. Using a piping bag, we decorate the cake with drops of cream, creating an appetizing visual effect. As a final detail, we add some pieces of ladyfingers that have been soaked in coffee on top of the cream to add a crunchy note and an extra burst of flavor. Our dessert is now ready to be enjoyed, and the combination of flavors will surely delight anyone who tastes it.
