To start, we cut the Gorgonzola cheese into cubes of about 2 cm, being careful not to break them, as their texture is essential for integrating perfectly into the skewers. Then, we focus on the tomatoes. We choose well-ripened but firm tomatoes, which we wash with cold water to remove any impurities. Once dried, we cut the tomatoes into cubes of similar size to the cheese, so that we have a pleasant aesthetic and taste combination. Olives are another key ingredient. We drain them well from the brine in which they were preserved, letting them dry a little to avoid excess moisture. They will add a salty taste and a crunchy texture to our dish.
