Cottage cheese and sour cherry loaf cake

Dessert - Cottage cheese and sour cherry loaf cake by Giorgiana A. - Recipia

Cottage cheese and sour cherry loaf cake has a soft crumb, with tart fruit set on top. Cottage cheese goes into the milk-and-vanilla batter, while sour cherries bake on the surface and color the slices here and there. I leave the cheese a little lumpy, mashed with a fork, rather than blending it into a smooth paste. Prep: 20 minutes. Cook: 40 minutes. Rest: 20 minutes. Total time: 80 minutes. Serves: 8. Ingredients

  • 3 eggs
  • 1 pinch of salt
  • 200 g sugar
  • 300 g cottage cheese
  • 50 ml milk
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon grated lemon zest
  • 2 teaspoons vanilla extract
  • 210 g flour
  • 75 g pitted sour cherries

Preparation

1. Beat the eggs with the sugar and a pinch of salt until foamy. 2. Put the cottage cheese through a food processor or mash it with a fork, then mix it with the eggs. 3. Add the milk, baking powder and lemon zest. Stir in the vanilla extract, then gradually add the sifted flour. 4. Wash the sour cherries and remove the pits. 5. Line a loaf pan with parchment paper and pour in the batter. Arrange the sour cherries on top and press them into the batter a little with your fingers. 6. Bake at 180°C for 35-40 minutes, until golden and a toothpick comes out clean. 7. Leave the loaf to cool for 20 minutes before slicing.

Notes

Keeps covered in the fridge for up to 3 days; take a slice out a little beforehand so it isn't cold. Pitted cherries can replace the sour cherries in the same amount, but the slices will be less tart; the loaf contains gluten, dairy and eggs. Well-drained cottage cheese keeps the batter fairly thick, while very wet cottage cheese makes it runnier. Large sour cherries can be halved before you put them on top. Serve plain, with coffee or a glass of milk.

Frequently asked questions

Can I use ricotta instead of cottage cheese?

Yes, use 300 g of well-drained ricotta so the batter doesn't get too wet.

What should I do if the sour cherries are very juicy?

Leave them to drain for 10 minutes after removing the pits, then put them on top of the batter.

Can I bake it in a round pan too?

Yes, a 22 cm round pan works well. Start checking the loaf after 30 minutes.
