Eggplant Salad with Tomato and Roasted Pepper Topping

To prepare a delicious and refined appetizer, we start by taking care of our eggplants. Cut the eggplants into small cubes so they cook evenly. In a pan, add a little oil and sauté the onion until it becomes golden and translucent. Then, add the crushed garlic, stirring constantly to prevent it from burning. Once the garlic releases its aroma, add the chopped eggplants and mix well. Let them cook over medium heat, stirring occasionally, until they become soft. Season the mixture with salt and a little vinegar, to taste, to add a touch of acidity that will balance the flavors. Next, we will prepare the mayonnaise. Take the whole eggs and place them in a taller plastic cup to facilitate mixing. Pour the oil over the eggs, making sure to use a good quality oil, preferably a neutral one like sunflower oil. Insert the foot of the mixer, equipped with a metal whisk, to the bottom of the cup. Turn on the mixer at maximum speed, making sure to keep it in this position for a few seconds. It is essential to bind the mayonnaise to the bottom of the cup to avoid separation of the ingredients. If you notice that the oil has not fully incorporated, lift and submerge the mixer a few times until you achieve a fluffy and consistent mayonnaise that will not spill from the cup when turned upside down. Once the mayonnaise is ready, mix it with the sautéed eggplants and let the mixture chill in the refrigerator for at least two hours. This resting time will allow the flavors to combine and become more intense. Meanwhile, prepare the topping. Peel the roasted pepper and cut it into thin strips. The tomatoes, peeled, will be diced. In a pot, add the tomatoes along with their juices and sugar. Cook over low heat, stirring occasionally, until the tomatoes break down and the juice reduces. Finally, season with salt, pepper, and oregano, to taste. Once the mixture is ready, add the strips of pepper and finely chopped parsley. Let everything cool in the refrigerator for at least two hours, so the flavors blend perfectly. When serving, arrange the eggplants on an elegant platter alongside the refreshing tomato and pepper topping, each ingredient retaining its freshness and flavor. Bon appétit!
