My Stuffed Pumpkin

The pumpkin is cut in half lengthwise, taking care to obtain two even halves. Using a spoon or a sharp knife, the flesh is scooped out, leaving the skin intact, to create a natural container for the filling. The scooped pulp is kept separately, perfect for a delicious soup or other dishes. The chicken is sliced thinly, and the bacon is cut into small pieces to provide a savory taste to the dish. The onion is carefully peeled, washed, and finely chopped, while the greens, namely parsley and dill, which should be fresh, are washed and finely chopped. If cheese is used, it is grated on a cheese grater to easily integrate into the filling. In a large pot, the oil is added and heated over medium heat. When the oil is hot, the chopped onion is added and sautéed for 2-3 minutes until it becomes translucent. Then, the chicken and bacon are added, allowing them to fry together. It is important for the bacon to release its fat, and the chicken to be cooked to about 85%. After the meat is cooked, salt, pepper, and seasoning are added, being careful not to add too much salt, as the seasoning already contains salt. The mixture is left on the heat for another minute and then removed from the heat. The pepper is washed and diced, and these cubes are added to the meat mixture without putting the pot back on the heat. This flavorful filling will give taste to the stuffed pumpkins. Before being stuffed, the pumpkins are lightly salted and left for a few minutes. After that, they are washed of salt and drained well. With the delicious filling obtained, the pumpkins are filled, and a drop of oil is placed in each pepper, followed by the rich filling. Breadcrumbs are sprinkled over the filling, then the grated cheese is added, followed by the chopped parsley and dill. A slice of tomato is placed on top, both for an attractive appearance and for added flavor. The dish is baked in a preheated oven at 180 degrees Celsius for about 20 minutes. After this interval, it is taken out of the oven, and a sprinkle of cheese is added over the tomatoes, then it is placed back in the oven for another 1-2 minutes until the cheese melts. This recipe is served warm, with dill sauce, according to preference, and for those who love intense flavors, the sauce adds an extra touch of flavor. The final dish is an explosion of flavors, perfect for a family meal or with friends!
