It is mashed with a little salt and some melted butter, using some of the butter reserved from the potatoes. A bit of potato water is strained and hot dill and parsley, along with a bay leaf, are added to it. A lid is placed on to infuse. To the crushed garlic, a finely chopped hot pepper is added, and then the potato water with herbs is poured in. A very good and slightly spicy brine is created. This is used to drizzle over the potatoes, which are served as a side dish with meat. I had chicken, and it went very well with the brine and potatoes!
