Green Bean Meatballs

Salad - Green Bean Meatballs by Floarea P. - Recipia

To make delicious bean patties, start by preparing the necessary ingredients. Choose a type of bean you prefer, whether it is white, red, or black beans. Wash the beans well and, if necessary, soak them a few hours before cooking. Then, boil the beans in a pot of water, adding a little salt to enhance the flavor. Boil the beans just until they become slightly soft so that you can poke a fork into them, but still remain crunchy. Alternatively, you can opt for steaming to preserve the nutrients and texture. After the beans are boiled or steamed, drain them well from excess water. In a blender or a large bowl, add the beans, salt, pepper, egg, and a few peeled garlic cloves. Blend everything until you achieve a smooth puree. It is essential that this puree has a fine texture but still retains the consistency needed to form the patties. Once you have obtained the puree, gradually add the breadcrumbs, mixing constantly. The amount of breadcrumbs will vary depending on the moisture of the puree; the goal is to achieve a mixture that is firm enough to form patties, but not so dry that they become tough. Ideally, you should be able to shape patties the size of a ping pong ball or golf ball, which you will slightly flatten between your palms, having your hands slightly damp to avoid sticking. To cook the patties, you can choose to fry them in a well-heated non-stick pan without adding oil for a healthier option, or you can opt to bake them in a preheated oven. If you choose the oven option, place the patties on a baking sheet lined with parchment paper to prevent sticking. Bake for about 20-25 minutes, flipping them halfway through, until they are golden and crispy on the outside. These bean patties are excellent served warm, alongside a fresh salad or a yogurt sauce with herbs. Enjoy them as an appetizer or as a main dish, and savor their delicious flavor and crunchy texture!
