Stew with roasted peppers and chicken

We start by preparing the peppers, choosing the best ones from the market. Ideally, we should opt for red peppers, thinking of the sweetness and intense aroma they will bring to our dish. In a non-stick frying pan, without a drop of oil, we place the peppers to roast. It is important to turn them occasionally so that they cook evenly on all sides. The roasting process will transform the texture of the peppers, making them softer and easier to peel later. After about 10-15 minutes, when the skin becomes slightly charred and peels off easily, we take them out of the pan and transfer them to a bowl. As soon as they have cooled a bit, we add salt over them, which will help intensify the flavor and soften the flesh of the peppers. This step is essential because the salt will create a note of contrast and highlight the natural sweetness of the peppers. We let the peppers sit for a few minutes, during which we will notice how a small amount of juice forms from the combination of salt and moisture. Once they have completely cooled, we move on to peeling them. Using our fingers or a knife, we carefully remove the skin, which should come off easily. It is important to do this gently so as not to destroy the structure of the pepper flesh. Once peeled, we tear the peppers into strips, being careful to maintain their shape and not crush them. This step will not only help with the final appearance of the dish but will also facilitate their integration into subsequent recipes.
