Baked tuna and mushroom pasta

Pasta/Pizza - Baked tuna and mushroom pasta by Filofteia K. - Recipia

Baked tuna and mushroom pasta brings frankfurters and tuna together, with Parmesan lightly browned on top. The mushrooms and cream keep the pasta moist, while the top just sets. I like tuna, and I tried this combination and liked it; when serving, I leave the chunks whole. Prep: 20 minutes. Cook: 24 minutes. Rest: 10 minutes. Total: 54 minutes. Serves: 4. About 570 kcal and 29 g protein per serving.

Ingredients

  • 250 g fusilli
  • 1 teaspoon salt for the pasta water
  • 15 ml olive oil
  • 1 small onion (100 g)
  • 2 garlic cloves
  • 1 small can sliced mushrooms (200 g drained)
  • 2 frankfurters (100 g total)
  • 2 cans tuna in oil (160 g each)
  • 15 ml oil from the tuna cans
  • 1/2 teaspoon salt for the pan
  • 1/4 teaspoon ground white pepper
  • 200 ml cooking cream
  • 1/8 teaspoon ground nutmeg
  • 30 g grated Parmesan

Preparation

1. Preheat the oven to 220°C. Bring 2000 ml water and 1 teaspoon salt to a boil, add the pasta and cook for 8 minutes, until still slightly firm. Drain. 2. Heat the olive oil in a pan and cook the finely chopped onion for 3 minutes, until soft and translucent. Add the chopped garlic and well-drained mushrooms; cook for 2 minutes, then add the sliced frankfurters and cook everything for another minute. 3. Add the tuna in chunks, 1/2 teaspoon salt and the white pepper. If the pan looks dry, pour in up to 15 ml oil from the can. Add the pasta to the pan and mix gently. 4. Transfer the mixture to an ovenproof dish. Pour in the cream and stir, then grate the nutmeg and Parmesan over the top. Bake for 10 minutes, until lightly browned on top, then let the dish stand for 10 minutes before serving.

Notes

You can use 100 g diced bacon instead of the frankfurters; the pasta contains gluten, and the cream and Parmesan contain dairy. Choose canned tuna in whole chunks, not flakes, so the pieces stay visible among the pasta. If the canned mushrooms are salty, rinse them briefly and pat them dry before adding them to the pan. Thicker fusilli may need another minute of boiling, but they soften if they spend too long in the oven. The cream may look too runny before baking; the pasta absorbs some of it as it sits in the dish. Keep covered in the fridge for up to 3 days. I serve it with a simple green salad.

Frequently asked questions

Can I use tuna in its own juice?

Yes. Drain it well and add 5 ml olive oil to the pan, in addition to the oil used for the onion.

Can I use fresh mushrooms instead of canned ones?

Yes, use 250 g sliced mushrooms and cook them for 8 minutes, until the liquid they release has evaporated.

What can I use instead of Parmesan?

Put 40 g grated cheese on top; it melts and browns in the oven.
