Pumpkin, a seasonal ingredient rich in nutrients and with a sweet taste, is perfect for being transformed into a delicious dish. Start by peeling the pumpkin, removing the skin with a sharp knife, then slice it into thin pieces. The pumpkin slices are placed in a tray, which can be lined with baking paper to facilitate later cleaning. Place the tray in a preheated oven at 180 degrees Celsius and let it bake until it becomes soft and slightly caramelized, which will enhance the natural flavors of the pumpkin. Meanwhile, prepare the potatoes. Peel them, wash them under a stream of cold water, and cut them into cubes or slices, as preferred. Boil the potatoes in salted water, being careful not to overcook them so they remain firm. Once the potatoes are cooked, drain the water and let them cool in a bowl. When the pumpkin is baked and cooled, mash it with a fork until you obtain a fine puree. In a large bowl, combine the pumpkin puree with the cooled and mashed potatoes. Add salt to enhance the flavor and an egg, which will help bind the ingredients. Mix well until the composition is homogeneous. Start incorporating the flour gradually, two tablespoons at a time, mixing continuously. Continue this process until the dough becomes elastic enough and no longer sticks to your hands. When you have obtained a consistent dough, break off pieces from it and form small balls, which will become gnocchi. Place the balls on a floured work surface to prevent sticking. In the meantime, bring water to a boil in a large pot. When the water is boiling, carefully add the gnocchi and let them boil until they rise to the surface, indicating that they are ready. At the same time, prepare the sauce. In another pot, add a little water and, when it starts to boil, add a fresh tomato, letting it boil for a few minutes to soften its skin. After it has cooled, peel the tomato and cut it into small cubes. In a pan, heat olive oil and add chopped onion and garlic. When the onion becomes translucent, add the minced meat and let it brown. After a few moments, add the chopped tomato, tomato sauce, and a little water. Season with salt, pepper, chopped rosemary, sugar, and a bay leaf. Let the sauce simmer on low heat, stirring occasionally, until it thickens and the flavors meld together. Once the gnocchi are ready, drain them and add them to the hot sauce, stirring gently not to crush them. Finally, sprinkle grated cheese on top and mix everything until the cheese melts slightly. Serve the gnocchi warm, garnished with a little chopped fresh parsley, if desired. This recipe is not just a feast for the taste buds but also an excellent way to savor the flavors of autumn.
