Chicken roll with vegetables

Appetizers - Chicken roll with vegetables by Evanghelina F. - Recipia

Sometimes I need a quick appetizer that can be made without much hassle and that turns out well even when I'm not in the mood for complications. The chicken roll with vegetables came into rotation when I had some chicken breast in the fridge and a few vegetables that I needed to use up anyway. It's easy to make, doesn't require hard-to-find ingredients, and fills the tray without much effort. Quick Info Total time: about 1 hour Preparation time: 30 minutes Baking time: 30 minutes Servings: 6-8 slices, depending on how thick you cut them Difficulty: easy Recipe type: appetizer, snack Ingredients - 1 piece of boneless chicken breast (large enough to roll) - 1 small zucchini - 1 carrot - 1/2 red bell pepper - 100 g cheese - salt - pepper Preparation method 1. Take the boneless chicken breast and cut it lengthwise, without separating it completely, so you can open it like a book. If the piece isn't large enough, cut a little more on the sides, so you can spread the meat. 2. Place the chicken piece between two sheets of plastic wrap or directly on a cutting board and pound it with a meat mallet to get a thin, even sheet. It doesn't need to be too thin, just enough to roll it up at the end. 3. Season the meat with salt and pepper on both sides, to taste. Place it in a bowl or on a plate, cover, and let it chill in the fridge for 20 minutes. This helps it absorb flavor, especially if the chicken breast doesn't have much taste. 4. Meanwhile, clean the vegetables. Cut the zucchini and carrot into thin sticks, about the size of a pinky finger. Similarly, cut the half red bell pepper into thin strips. 5. Cut the cheese into sticks as well, not too thick, so it melts easily in the oven. 6. Remove the chicken breast from the fridge and place it back on the cutting board. Lay the vegetable sticks over the meat lengthwise, at one end (don't place them too close to the edge so they don't spill out when rolling). Place the cheese on top. Sprinkle a little more salt and pepper if you feel it needs it. 7. Tightly roll the meat, being careful not to tear it. If a thick roll forms, make sure to enclose all the vegetables inside. 8. Tie the roll with a thicker cotton string (found in stores, usually in the kitchen utensils section). If you don't have that, use another type of string, but it shouldn't be colored. 9. Place the roll in a baking dish lined with parchment paper or directly in the dish. No oil needs to be added, as the cheese and vegetables release enough liquid. 10. Bake in a preheated oven at 180 degrees for 30 minutes. Check after 25 minutes – the roll should be browned on top without drying out too much. 11. Remove the dish and let the roll cool completely before slicing. Otherwise, the cheese will ooze out, and the slices won't hold their shape. 12. Cut into slices with a sharp knife. It can be served as an appetizer or as a main dish alongside a salad. Why I make this recipe often It’s one of the simplest roll variations I’ve tried. You don’t need many ingredients, and you don’t waste time with complicated procedures. It works well for meals with many guests because you can make 2-3 rolls at the same time. You can slice them beforehand and keep them in the fridge for a few days; they slice easily and don’t dry out if kept in a container. Tips and variations Tips - Pound the chicken breast as evenly as possible; otherwise, some portions will be thick and hard to roll. - Don’t put too many vegetables inside; otherwise, the roll will come apart while baking or be hard to tie. - Let the roll cool before slicing, especially for a nice presentation. - Tie tightly with string so it doesn’t come apart. Substitutions - You can use another type of hard cheese if you don’t have cheese, such as drier telemea or sliced gouda. - If you don’t have zucchini, you can use more carrot or even thin strips of celery. - The red bell pepper can be replaced with yellow or orange pepper for a different color. Variations - If you want it to be heartier, you can add spinach or sautéed mushrooms inside, but don’t add too much liquid to avoid softening the roll. - For a different flavor, sprinkle a little oregano or basil over the vegetables, although the classic recipe is just with salt and pepper. - If you prefer, you can coat the roll in breadcrumbs before baking, but it’s not necessary. Serving ideas - It works well cut into thin slices as a cold appetizer on platters. - You can serve it with a simple salad or pickles. - If you want a complete meal, serve it alongside some roasted potatoes or a side of rice. Frequently asked questions 1. How do I properly open the chicken breast for the roll? Cut the breast lengthwise without separating it completely, and open it like a book. Then pound it with a meat mallet to get as even a sheet as possible. 2. Can I use boneless thighs instead of breast? You can, but it will be a bit harder to get a regular shape, and rolling may be more difficult since thighs have different fibers. 3. Can the roll be frozen before baking? I do not recommend freezing the raw roll, as the vegetables release water when thawed and can soften the meat. You can freeze the baked roll, but the texture will be slightly different when thawed. 4. What type of string should I use for tying? The safest is to use food-grade cotton string without dyes. It can be found in large stores in the kitchen utensils section. 5. Should the roll be covered while baking? No, the roll bakes uncovered to brown on the surface. If you see it burning too much, you can loosely cover it with a sheet of parchment paper at the end. Nutritional values Estimate for one serving (1 slice out of 8): Calories: 90-100 kcal Protein: 10-12 g Fat: 5-6 g Carbohydrates: 2-3 g Values are approximate and depend on the size of the chicken breast and the amount of cheese used. The roll is quite low in carbohydrates and high in protein due to the chicken breast. The fats mainly come from the cheese. Storage and reheating The chicken roll with vegetables can be stored in the fridge in a container or covered for up to 3 days. It serves well cold as an appetizer but can be easily reheated in the oven or microwave. I do not recommend keeping it for more than 3 days, as the vegetables start to change texture and taste. If you want to use it for platters, slice only what you consume, keeping the rest whole.
