Oatmeal Raisin Cookies (vegan oatmeal cookies)

To prepare these delicious oatmeal raisin cookies, we start by preheating the oven to 180 degrees Celsius. This step is essential for achieving even baking and ensuring that the cookies turn golden and crispy. In a larger bowl, we use a hand mixer to combine the softened butter with the sugar. We mix well until we achieve a smooth cream, which should become fluffy and airy. This is the ideal time to add the mashed banana, which not only enhances the flavor of the cookies but also gives them a pleasant moisture. If you prefer, you can substitute the banana with eggs, thus adding an even richer texture to the dough. We continue by incorporating the vanilla, which will add a sweet and aromatic note. After mixing the wet ingredients well, it is time to deal with the dry ones. In another bowl, we combine the flour with baking soda, salt, and cinnamon. These ingredients will not only give flavor to the cookies but will also contribute to their rise during baking. We gradually add the mixture of dry ingredients to the bowl with the wet ingredients, mixing with a wooden spoon. It is important not to overmix, as we want to keep a pleasant texture. Once we have obtained a homogeneous dough, we add the oats and raisins. The latter will provide extra sweetness and an interesting texture. Using the same wooden spoon, we gently mix to incorporate the ingredients well. With a teaspoon, we take portions of dough and form mounds on an ungreased baking sheet, leaving enough space between them, as the cookies will expand in size during baking. We gently flatten each mound with a fork to give them a nice and even shape. The cookies bake in the oven for about 10 minutes, or until the edges turn very light golden and the center remains slightly soft, as they will harden as they cool. Once done, we let them cool on a rack to prevent condensation from forming. Once completely cooled, we store them in an airtight container to preserve freshness and avoid drying out. These cookies are ideal for enjoying as a snack or for breakfast, being an excellent source of fiber that helps with intestinal function.
