This delicious cake is a perfect combination of crispy pastry sheets and rich fillings, making it an ideal dessert for any occasion – from festive meals to family gatherings. Necessary ingredients: For the pastry sheets: - 1 package of pastry sheets (approximately 400 g) - 3 eggs - 5 tablespoons sugar - 150 ml oil - 250 ml yogurt or sour cream - 3 tablespoons semolina - 1 teaspoon baking powder - Butter for greasing the pan Fillings: 1. First filling (walnuts): - 250 g ground walnuts - 3 tablespoons sugar - 150 ml milk 2. Second filling (cheese): - 500 g cottage cheese - 3 tablespoons sugar - 2 eggs - Flavorings (orange zest, cinnamon, etc.) 3. Third filling (apples): - 6 large apples, peeled and grated - 1 teaspoon cinnamon - 2 tablespoons sugar - 1 tablespoon lemon juice (to prevent oxidation) 4. Fourth filling (poppy seeds): - 250 g ground poppy seeds - 300 ml milk - 2 tablespoons sugar Step by step for a perfect result: 1. Preparing the ingredients: Thaw the pastry sheets if necessary, and prepare your pan. Choose a pan that matches the size of the pastry sheets for easier assembly. Grease the pan with butter to prevent sticking. 2. Preparing the fillings: - Walnut filling: Warm the milk slightly, add the sugar, and stir until dissolved. Let it cool, then add the ground walnuts. - Cheese filling: Mash the cottage cheese with a fork or in a blender, then add the sugar, eggs, and desired flavorings (cinnamon, orange zest). Mix well to achieve a smooth consistency. - Apple filling: Grate the apples and mix them with sugar and lemon juice to prevent oxidation. - Poppy seed filling: Heat the milk, add the sugar, and once cooled, add the ground poppy seeds. 3. Preparing the mixture for greasing the sheets: Beat the eggs with a mixer together with the sugar until frothy. Add the semolina mixed with baking powder, yogurt, and oil, and mix well. 4. Assembling the cake: In the prepared pan, place two whole pastry sheets. Pour two ladles of the greasing mixture over them and spread it well. Add the first filling (walnuts) and place a pastry sheet on top, greasing it with the greasing mixture. Repeat this process, alternating fillings and sheets until all ingredients are used, finishing with two pastry sheets on top. 5. Finishing: Pour the remaining greasing mixture over the last sheets, leveling it well. Before placing the pan in the oven, use a knife to gently cut through the cake to help it bake evenly. 6. Baking: Preheat the oven to 180°C and bake the cake for about 40 minutes or until it turns golden and crispy. 7. Cooling and serving: Allow the cake to cool completely before slicing. It can be served plain or with vanilla sauce or ice cream for an unforgettable experience. Useful tips: - Use quality ingredients: fresh cottage cheese and ground walnuts enhance the flavor. - If you want to experiment, you can add raisins or sour cherries to your fillings for a fruity note. - Gibanica keeps well in the fridge but is best enjoyed fresh on the day it’s made.
